(Louisville Business First) - You can get a fancy sausage and a beer at Louisville's newest restaurant.
Red Top Hotdogs opened its first brick-and-mortar location Thursday in Louisville's Shelby Park neighborhood.
Owner Ryan Cohee said that after nearly a year of planning and six months of renovations, he's ready to go.
Cohee's gourmet hot dog business started as a small food cart four years and quickly grew into a food truck. He always imagined a restaurant but had a hard time finding a suitable space.
He found it at 1127 Logan St. in the old Keswick Democratic Club building, which is about 3,200 square feet.

Cohee said he has done a lot of work in the space, where the private club allowed indoor smoking. He and his team took out drop ceilings throughout, redid the bar, took down drywall to expose brick walls and painted everything, he said.
The restaurant and food truck together will have about 10 employees, and the food truck will continue running part-time at festivals and events.
Red Top's Shelby Park location will be open at Wednesday through Sunday. It will open at 4 p.m., but closing hours haven't been determined yet.
