Low Country Shrimp Boil
2 lbs baby red potatoes
5 ears of corn shucked and cut in half
1 lemon cut in quarters
3lbs jumbo shrimp shell on
1 lb smoked sausage cut 2 inch thick slices
1 TB salt
½ cup Old Bay seasoning
4 large cloves of garlic peeled and crushed
In a large pot bring 1 gallon of water to a rolling boil. Add the potatoes, sausage, lemon, salt, Old Bay and garlic and cook for 10 minutes on simmer. Add the corn and cook another 5 minutes. Bring pot back up to a rolling boil and add the shrimp. Cook for 1 minute and turn off the heat and let stand for 4-5 minutes. Strain most of the liquid off and serve in a large bowl. Sprinkle with old bay for a little extra seasoning and serve.
