Brunch at the Bristol for mom on Mother's Day

Mom’s Chicken Pot Pie with Love and Grits

½ cup butter   
1 cup diced onion   
½ cup diced celery  
½ cup diced carrot  
½ cup all-purpose flour   
1 ½ cups heavy cream
1 ½ cups chicken stock   
1 cup frozen peas   
1 cup frozen corn    
¼ teaspoon ground thyme     
1 teaspoon rubbed sage
3 cups shredded chicken
Salt and pepper to taste
1 cup heavy cream    
1 cup chicken broth    
½ cup stone ground grits   
6 ounces cream cheese   
Puff pastry sheets cut into hearts

Set oven to 350 F. In a Large heavy Dutch oven style pot, melt the butter and add onion, celery, and carrots. Sweat, don’t brown the vegetables, until tender, about 5 minutes. Season with salt and pepper. Add flour and cook for about one minute. Add cream and stock. Bring to a boil. Add peas and corn and bring to a simmer. Add thyme and sage. Then add in the chicken and taste, adjust salt and pepper.  Bring to a simmer, cover and remove from heat.

In a medium sauce, pot bring the chicken broth and the heavy cream to a boil.  Pour the grits in the liquid, turn to low, cover and simmer for 20-25 minutes. Stir often and check often to be sure they don’t stick.  Once cooked, stir in the cream cheese, until smooth and creamy.

Keep your puff pastry cold until ready to use. Lightly flour your workspace and cut the pastry into hearts (or desired shape).  Place the hearts between two sprayed cookie sheets. Bake for 10 minutes, then remove the top pan and bake for a 5 more minutes or until golden brown and delicious.
Remove from oven and serve.

To serve, mound a scoop of cream cheese grits in the bottom of a bowl. Ladle on the pot pie mixture and then top with your puff pastry. Garnish with chives or greens of your choice.
