Roasted Bison Tenderloin

Ingredients:
Bison Rump Roast
Onions
Celery
Carrots
Beef Stock

Marinade:
Red wine
Shallots
Juniper Berries
Garlic
Salt
Pepper

Marinate overnight in red wine, shallots, juniper berries, fresh garlic, salt, and black pepper.

Remove from marinade and dry.

Braise in a pan with onion, celery, carrots, beef stock.

Roast in oven at 350 until the internal temperature is 135

Remove from oven and let the meat rest for 15 minutes before cutting.
