Sullivan University's Cynthia Chandler makes skillet apples, gives farmers' market tips

Skillet Apples

Ingredients

 

    4 tablespoons butter

    6 Golden Delicious apples

    2 teaspoons pumpkin pie spice

    1 tablespoon maple syrup

    ¼ teaspoon kosher salt

    ½ teaspoon vanilla

 

Directions

 

In a heavy-bottomed pot, melt the butter. When it starts to foam, add the apples and cook for about 10 minutes.  Add vanilla and pumpkin pie spice and simmer until ready to serve.  Serve as a side dish or over ice cream.

 

Variations:  You can create an apple parfait by layering vanilla yogurt with the skillet apples.  I use Golden Delicious apples because they are sweeter and you can add less sugar.

 

FARMERS MARKET SHOPPING TIPS

 

Tips from Cynthia Chandler, Culinary Nutritionist at Sullivan University

 

*Shop early for the best selection

*Walk the farmers market before buying to get an idea of what is offered and pricing differences

*Shop late for the best price

*Talk to the farmer about how he/she has grown his foods if you have any questions or concerns

*Ask for tips from the farmer as to a recipe idea

*Ask what pesticides have been used on the product

*Avoid samples unless there are toothpicks for individual sampling

*Check to see if eggs are held under refrigeration (eggs should be held at 45 degrees or less and above freezing)

*Bring bags from home that have been washed to put produce in

*If buying meat, eggs, or poultry, use a separate bag

*Bring along some small plastic bags and paper towels and a water mister if you are buying herbs; they are very delicate and  need to be placed on the top of your shopping bag; wrapping them in paper towels and misting them will keep them moist and fresh

*Ask what the farmer may be bringing next week and research recipe ideas in advance
