Smokey mountain chai pumpkin pie


choose your crust…


graham cracker crust
(option 1)
-preheat oven to 350°
13oz (bout 24 crackers) graham cracker crumbs
1/2 cup organic granulated sugar
1/8 teaspoon of salt
5 oz (10 tablespoons) melted organic unsalted butter
pulse all the ingredients in a mixer until combined. firmly press crumb
mixture into 9-inch pie dish. bake until the edges of the crust are golden,
between 12-14 minutes. let cool


hillbilly sweet pie crust (option 2)
-preheat oven to 350°
2 ¼ cups flour
½ teaspoon baking powder
1 teaspoon salt
2 tablespoon brown sugar
⅔ cup shortening
2 teaspoon vinegar
1 egg
¼ cup cold water
cut shortening into dry ingredients. mix together remaining wet
ingredients... mix dough gradually adding liquids until dough is moist
enough to hold together. with floured hands make dough into a ball then
refrigerate for one hour.
on a lightly floured board roll dough out larger than your upside down 9
inch pie pan. gently roll the dough around the rolling pin and transfer it
into the pie pan. unroll, ease dough into the bottom of the pie pan. pre bake
pie crust for 15 minutes. let cool


pie filling

3 eggs
1/3 cup brown sugar
1/3 cup granulated sugar
1 tablespoon + 1 teaspoon of ground Smokey mountain chai tea
a pinch of salt
1 tablespoon chopped candied ginger
1 can (16 oz) organic pumpkin, (2 cups)
3/4 cup heavy cream
3/4 cup half & half
-preheat oven to 375°


in a large bowl, whisk eggs, sugar, brown sugar, ground chai, salt, &
candied ginger into pumpkin meat. slowly whisk in cream and half & half.
pour mixture into cooled pie crust. bake until set, 55 – 65min. the center
will still move a little when you shake it. cool on rack at room temperature
for about 1 hour, then refrigerate to cool completely.


chai whipped cream
1 cup heavy cream
1/2 tablespoons of finely ground Smokey mountain chai tea
1 teaspoon granulated sugar
to make chai whipped cream: beat cream, ground Smokey mountain chai
tea & white sugar in a medium bowl with an electric mixer until soft peaks
