Meijer Great Recipe Challenge: Southern Comfort Bread Pudding

Southern Comfort Bread Pudding

1 loaf sweet Italian Bread cut into 2 inch cubes (crust, too)

Ahead of time:  Put cut up bread in a large bowl or on a cookie sheet to dry out overnight. Soak the raisins in 1/3 cup Southern Comfort for about an hour and drain.

1 can sweetened condensed milk

3 whole eggs

1/2 cup half & half

1/4 cup Turbinado sugar

1/3 cup Southern Comfort

1/2 cup soaked raisins 

1/2 cup chopped pecans

Pre-heat oven to 350 degrees 

Generously butter a 2 quart souffle dish. Put bread in the souffle dish. In large bowl, mix sweet milk, eggs, half & half, sugar, raisins and pecans.  Mix well with a hand whip.  Pour over the bread in the souffle dish and, with a spatula, press bread until most of the wet ingredients are absorbed.  If more moisture is needed, add more half & half a little at a time. Bake for 30 - 40 minutes until a light golden color.  Let cool a bit and serve with ice cream, whipped cream or the sauce of your choice.
