1 can SPAM 12 ounces
2 eggs beaten with 2 tablespoons water
1 teaspoon horseradish mustard
1 cup flour
1 cup seasoned bread crumbs
3 tablespoons brown sugar
salt and pepper to taste
5 tablespoons butter
1 large finely sliced onion
12 romaine lettuce leaves (or any small but flexible leaf)
1 cup jasmine rice (or plain rice)
Avocado dip (I prefer the spicy kind)
Cut SPAM the width of the SPAM can into sticks (you should get about 36 sticks) Roll in seasoned flour - then roll in beaten eggs mixture - and then in seasoned bread crumbs. Place in single layer on cookie sheet and refrigerate for about an hour.
Meanwhile slice the onions and caramelize. To caramelize onions: add onions to 3 tablespoons melted butter and stir to coat. Cook the onions for about ten minutes, being careful not to let them burn. Sprinkle the brown sugar over onions and continue to cook about another 10-20 minutes, scraping the pan frequently until the onions are a rich browned color. Remove and set aside- keep warm if desired.
Using same skillet melt remainder 2 tablespoons butter, 3 tablespoons brown sugar, and horseradish mustard and stir until well mixed. Add SPAM sticks in a single layer and cook until slightly brown on both sides. Keep warm in low temperature oven. Make rice as directed on package.
Make dipping sauce: whisk together 1/3 cup honey, 1/3 cup soy sauce, 1 clove garlic- diced, 1 teaspoon lemon juice, 1 finely chopped scallion.
When ready to serve - spread a small amount of the spicy avocado dip on the leaf. Add a teaspoon or so of cooked rice then a bit of the caramelized onion. Put a SPAM stick or two on top. Add some dipping sauce and then fold the lettuce leaf and enjoy. Serve remainder of the sauce on the side.
