Peachy Parfait


1 cup nonfat vanilla Greek yogurt

3/4 cup granola

1 peach chopped

Drizzle of honey


Assemble layers of parfait starting with yogurt on bottom

Next layer granola

Layer chopped peaches, repeat layers in that order until glass is filled to top.

Drizzle honey over completed parfait

Garnish with mint sprig.

Vinaigrette Recipe:

1/4 cup oil (olive or grapeseed)

3-4 tbsp. white wine vinegar

1/2 cup very pureed peach

1 tbsp. water

1/4 cup chopped fresh basil

Mix oil and vinegar in bowl.

Puree peach with 1 tbsp. water in food blender/processor until peach is completely pureed and in liquid form.

Chop fresh basil.

Add all ingredients together and whisk well.

Total recipe yields approx. 1/2 cup

Can use 1/4 cup to toss in pasta dish and the other 1/4 cup for extra dressing over pasta and salad greens.
