Meijer Great Recipe Challenge: Toasted Coconut Pie

Toasted Coconut Pie  


9 in. unbaked pie shell

3 eggs

1 stick butter

1 1/2 cups sugar

1/3 cup flour

2 Tbs. cream of coconut

1 cup flake coconut  


Melt butter and add cream of coconut. Mix well. Combine remaining ingredients using half of flake coconut and add to butter mixture and mix well. Pour into unbaked pie shell and sprinkle remaining coconut over top of pie. Bake at 325 degrees until set; this could take up to 45 minutes). Pie will still be a little jiggly in the middle when done.
