Fall Flatbread Recipe
(yields 5)
 
 
 
 
For Flatbread:
 
 
2c        Bread Flour
1tbs     Extra Virgin Olive Oil
1tsp     Dry Active Yeast
¾ c      Warm Tap Water
1 pinch Salt, Pepper, & Sugar
 
Extra Flour for rolling
 
 
 
For Topping:
 
 
3c        Apples, sliced – sauté with butter and sugar until golden brown and soft
1c        Broadbent Apple wood Smoked Bacon – Cooked & Chopped
Two Onions – diced small and cooked with butter and sugar until golden brown
2c        Capriole Farm Goat Cheese
5c        Fresh Arugula
 
 
 
 
Instructions:
 
 
To make the dough, add all ingredients for Flatbread to mixer. Mix until it springs back when touched. Place in bowl and cover with plastic. Allow dough to rise at room temperature for about 25 minutes.
 
Dust a workspace with flour and roll out tennis ball size of dough ¼ inch thick, bake until golden. Layer toppings and return to oven until cheese is melted.
