Jerk Chicken Tacos with Jerk Pineapple Relish
2lb Chicken Breast
6oz Kilimanjaro Jerk Sauce
1 teaspoon Olive Oil
1/4 Cup Water
Toss Chicken and Kilimanjaro Jerk Sauce overnight in refrigerator.
Heat oil in sauté pan and add chicken breast and water. Simmer for 10 min or until done. Turning often. (You can also grill or bake the chicken.)
Let cool and small dice the chicken.
Jerk Pineapple Relish
1cup Fresh Diced Pineapple
1/4 Diced Red Onion
1/2 Cup Diced Cucumber peeled and seeded.
1/4 Cup Diced Cherry Tomato
1 tablespoon Olive Oil
1 1/2 tablespoon Jerk Sauce
Mix all together in a bowl.
Chef Doug recommends using small wheat flour soft taco shells. Spread 1 teaspoon goat cheese on each shell, top that with lettuce, chicken and the relish.
Makes approximately 12 tacos
