Chef Marsha Lynch Pimento Cheese
Yields 2 quarts
Ingredients
¼ pound Very Sharp White Cheddar – Shredded
¼ pound Yellow Cheddar – Shredded
3 each Scallions, Chopped
2/3 cup Mayonnaise
8 ounces Cream Cheese
2 tablespoons prepared Horseradish
½ cup Diced Pimentos, rinsed
Salt and Pepper to taste
Procedure
Add all ingredients to a mixing bowl and mix until incorporated. Refrigerate till ready to serve.
