Juleps Catering Holiday Hors d'Oeuvres: Turkey Sliders and Mini Pumpkin Tarts

Turkey-Cranberry Holiday Sliders
Sliced turkey breast (cold)
Slider buns (such as brioche or multigrain, or King’s Hawaiian rolls)
Cranberry-Jalapeno Chutney, chilled (recipe below)
Sliced Havarti cheese
Small greens (such as spinach or arugula)
 
Slice open slider buns. Place greens on bottom bun. Top with sliced cheese, turkey and cranberry chutney. Serve on platters with festive picks to hold the sandwiches together.
 
Cranberry Jalapeno Chutney
1 small diced yellow onion
1 TBS chopped garlic
1 (12 oz) bag fresh cranberries
½ cup Golden Raisins
1 peeled, cored, diced apple (Granny Smith does well here)
1 finely diced fresh jalapeno
½ cup light brown sugar
½ cup white balsamic vinegar
Splash of red wine
Sea salt and freshly ground black pepper, to taste
Grapeseed or canola oil for sautéing
Holiday spices such as ground cloves, nutmeg, cinnamon and allspice (optional)
 
Saute the jalapeno and onion in oil until the onion becomes translucent. Add garlic and stir carefully until garlic softens. Add the red wine to the pan, scraping to reclaim any caramelization on the bottom of the pan. Add vinegar, raisins, apple, sugar and cranberries. Heat, stirring occasionally, until the cranberries pop. Add more wine if necessary for moisture. Add holiday spices and adjust seasoning with salt and pepper. When done cooking, it should be the consistency of warm jam. Cool to room temperature, then chill.
 
Mini Pumpkin Tarts
Mini pastry phyllo shells
1 can (15 oz) pumpkin
1 cup frozen whipped topping or sweetened whipped cream (make/buy extra for garnish)
½ tsp ground cinnamon (set some aside for garnish)
¼ tsp ground ginger
1/8 tsp nutmeg
1/8 tsp allspice
1 3.4 oz box of instant cheesecake-flavored pudding and pie filling
(you can substitute 1 tsp grocery “pumpkin pie spice” for the previous four ingredients)
Mint leaves and/or ginger snap pieces (for garnish)
 
Whisk pumpkin and spices together. Add pudding mix and whisk until smooth. Fold whipped cream or topping in gently with a spatula.
Spoon or pipe into thawed pastry shells. Garnish with mint leaf or ginger snap pieces, or both.
