Filet of Salmon with Almonds, Cilantro and Parmesan
Ingredients & Method
Make a pesto
½ cup fresh chopped cilantro
2 Tablespoons chopped Marcona Almonds
2 Tablespoons grated Parmesan Cheese
Zest of 1/2 – 1 lemon, to taste
Adjust seasoning to your needs and taste
Method: Combine in a bowl minutes before cooking the salmon
Cook the Salmon
4 – 4 ounce filets of salmon
Method: Start by spraying the skillet with cooking spray. Season the salmon with salt and pepper. Sauté salmon filets at medium heat on each side. When the salmon is almost done baste the salmon with the pesto. Cover for 1 minute then finish cooking to your desired temperature.
I like to serve this with a wild rice or brown rice salad with cucumber, tomatoes, green onions, lemon and Italian parsley.
