Frisch’s Buttermilk Ranch Wings – Fall Tailgate Recipes

August 2012

Frisch’s Big Boy

 

What you will need:  for a crowd of 10

Ø  4 dozen chicken wings, first and second joint, separated

Ø  16 oz jar of Frisch’s Buttermilk Ranch Dressing

Ø  Large gallon size freezer Zip Lock type bag (to marinate the wings)

Ø  Frisch’s Blue Cheese Dressing (as a dipping sauce if desired)

   

Optional Ingredients:  Put your own twist on it…

Ø  Tabasco Sauce

Ø  Cayenne Pepper

 

Preparation:

Ø  Place wings in a plastic zip lock bag and pour in the ranch dressing and squeeze the air out of the bag, and seal completely.

Ø  Gently massage the bag to incorporate the dressing with the chicken wings

Ø  Let marinate for at least several hours under refrigeration, up to overnight in the refrigerator (this is best).

Ø  Once the wings are marinated, take them out of the bag, and give them a quick drain in a colander over a sink to remove any excess dressing.

Ø  Place on a lightly oiled cookie sheet and place in a 350⁰F oven to cook for about 30 minutes, depending on the size of the wings.  Cook until an internal temp of 170⁰F is reached.

Ø  At this point, you can pack them in an insulated container to take to a tailgate party and finish on the grill for 3 to 5 minutes to crisp the exterior.

Ø  If eating immediately at home, remove from the oven and place on the grill to finish, if desired for 3 to 5 minutes to crisp.

 

Notes:

Ø  This recipe can be made up in advance and chilled prior to event; the wings can be grilled on site until they are fully re-heated to 165F minimum.

Ø  Serve with the blue cheese dressing as a dipping sauce if desired.

 

Cole Slaw – Fall Tailgate Recipes

Frisch’s Big Boy

 

What you will need:

Ø  Cole Slaw mix (dry) located in prepared salad area at local grocery store – figure about 2-3 oz. per person.   A 12 oz. bag will serve 4 to 6 servings.

Ø  Frisch’s Cole Slaw Dressing – Found at any local Frisch’s Big Boy Restaurant

Ø  Bleu Cheese – Dry crumbled, figure about 1 oz. per serving

 

Optional Ingredients:  Put your own twist on it…

Ø  Cashews

Ø  Almonds, sliced

Ø  Dried fruits, such as raisins, flavored cranberries, trail mix, etc.

 

Preparation:

Ø  Place dry Cole Slaw cabbage mix in large mixing bowl and add Frisch’s Cole Slaw dressing, mixing to moisten the cabbage.  (Basic guideline is about equal parts by weight, cabbage mix to dressing, less for a dryer mix and more for a wetter mix)

Ø  Use about an ounce of add-ins per portion, such as Crumbled Blue Cheese, nuts, dried fruits, etc.

Blue Cheese Mac & Cheese – Fall Tailgate Recipes

Frisch’s Big Boy

 

What you will need:  (this recipe yields one casserole dish, pictured below – about 12 servings)

Ø  1 lb.        Cavatappi Pasta (this is the large corkscrew)

Ø  2 cups   Half and Half Cream (milk can be used to reduce the fat)

Ø  1 lb.        Velveeta Queso Blanco processed cheese

Ø  ½ cup    Frisch’s Blue Cheese Dressing (found at any Frisch’s Big Boy)

Ø  ½ cup    Shredded Parmesan Cheese

Ø  ½ tsp.    Cayenne Pepper, ground

Ø  1 cup     Cheese Nips Crackers (crushed and used at end of recipe)

 

Preparation:

Ø  Cook pasta per instructions on box, while you make the sauce.

Ø  Combine the cream & Velveeta cheese (cut into 1” cubes) in a heavy sauce pan on low / medium heat to melt, stir often.

Ø  Whisk in the parmesan cheese, cayenne pepper, and Frisch’s Blue Cheese Dressing, and stir until melted together into a sauce (it will be slightly thin at this point).

Ø  Pour the cooked and drained Cavatapi Pasta in a greased casserole dish and pour the sauce over to cover.

Ø  Cover the dish with foil, and bake for 25 minutes at 350⁰F

Ø  Remove Foil for last 5 minutes and sprinkle the crushed cheese crackers on top and bake uncovered – total bake time 30 minutes.
