Creamsicle Crepes

Wonderful Crêpes Suzette Recipe

Serves 8

8 slices Wonder® bread, crusts removed

10 tablespoons butter, softened

2 tablespoons sugar

3 tablespoons freshly squeezed orange juice

2 tablespoons freshly squeezed lemon juice

Grated zest of 1 orange

Grated zest of 1 lemon

2 tablespoons orange marmalade

Vanilla or orange creamsicle ice cream

Orange slices, for serving

Using a rolling pin or tall drinking glass, roll each slice of bread until the slice is as thin as a crêpe. Butter one side of each slice of bread with 6 tablespoons of the butter. Sprinkle the sugar evenly over the butter on each slice. Fold each slice over diagonally and then diagonally again to create a small triangular crêpe. Butter and sugar each side of the triangular crêpes using 2 tablespoons of the butter.

In a large nonstick skillet, melt the remaining 2 tablespoons butter over low heat. Add the juices, fruit zests and marmalade. Stir to combine and simmer for 2 to 3 minutes. Carefully place the crêpes in the skillet and ladle the mixture over the crêpes until well coated. Spoon into serving dishes and accompany each with a scoop of ice cream. Garnish with the orange slices.

Tip: If desired, flambé with brandy - Grand Marnier or Cointreau. To flambé, add 4 tablespoons of the liqueur to the juice and marmalade mixture before adding the crêpes. Carefully light the liqueur. When the flame subsides, add the crêpes until well coated and serve as directed above.
