Ghyslain's hearty white bean soup
2-14 oz. cans of white beans (great northern, cannellini type,) drained
1 medium size onion, diced
2 tablespoon of olive oil
2 slices of bacon, precooked and chopped
4 oz. of Virginia ham, diced
3 leaves of sage, chopped
1 quart of chicken stock
2 tablespoons of apple cider vinegar
Salt and pepper
Method
In a saucepan at medium heat, sauté the onions in olive oil until translucent
Add the bacon, ham and sage, keep sautéing for another minute
Add the chicken stock and vinegar, bring to boil
Add the beans and bring back to boil. Simmer for about 10 minutes
Adjust salt and pepper to taste

-Can be frozen in small container
-Thaw in your refrigerator overnight and reheat on the stove or microwave
