Marksbury Farm Bourbon Chop
10 oz. French Cut Pork Chop (Marksbury Farms – Lancaster, KY)
1 T. Flour
2 oz. Olive Oil
For the Sauce
1 ½ oz. Olive oil
1 T. Diced Yellow Onion
¾ cup Chicken & Beef Stock (Equal Parts)
4 oz. Wild Mushrooms
1 tsp Fresh Oregano
1 tsp Fresh Thyme
½ tsp Ground Pepper
1 tsp Cornstarch
½ oz. Old Forrester Kentucky Bourbon
To cook the pork chop
Dust the pork chop with flour and saute in olive oil over medium heat six to seven minutes each side.
To prepare the sauce
For additional flavor, cook in the same pan used to saute the chop. Warm olive oil over medium heat. Add onions and cook until translucent. Add mushrooms and cook two more minutes.
Stir in herbs, pepper and stock and cook for additional two minutes. Finally, stir in cornstarch and Old Forrester Kentucky Bourbon. Pour over the pork chop and serve.
*A perfect side dish for this is Weisenberger Stone Ground Grits with Kenny’s Cheddar cheese and your favorite fresh, local vegetables.
