Momma’s Meatloaf Cupcakes

Meat loaf
2 pounds ground beef
1 package Lipton’s garlic and herb seasoning
4 tablespoons Worcestershire sauce
1/4 cup milk
1 egg
1/2 cup Italian bread crumbs
1 teaspoon garlic
1/2 white onion
1/2 green pepper
1/2 red pepper
Tomato sauce
1 cup ketchup
1 cup mango chutney
1 tablespoon Sriracha sauce
1 tablespoon pepper
Mashed Potatoes
6 medium Idaho potatoes
2 cups milk
1 stick of butter
3 tablespoons garlic

Medium size piping tip and bag
For Meatloaf: Dice peppers, onion and add to beef in a mixing bowl. Mince garlic and add to bowl with Worcestershire sauce. Beat milk and egg together then add to mixture, add the bread crumbs last. Spray your cupcake molds with Vegetable oil spray then form meatloaf into small balls. Make them a little bigger than your cupcake mold. Then place in molds and form to the shape of a cup cake. Cook at 400 degrees until 160 degrees or until firm.
For the sauce mix all ingredients together then glaze over meatloaf.
For the Mashed Potatoes:
Dice potatoes then boil until fork tender.
Heat milk, butter, garlic on low until butter is melted.
Drain potatoes. Then mash and slowly add liquid until smooth. Place in piping bag. Pipe potatoes over the cupcakes. Enjoy!
