From Simple to Super: Healthy Grilled Summer Salad

Healthy Grilled Summer Salad

2 Romaine Hearts
Vegetable oil
Salt and pepper
4 U10 Scallops
4 large tomatoes
A handful of strawberries
Crumbled cheese
Your favorite sesame soy vinaigrette 
3 smoked grapes (if you have a smoker, smoke purple grapes in smoke for 4-10 minutes, they should remain firm)

Cut romaine hearts in half and  preheat your grill on medium high. Lightly drizzle oil on romaine then season with salt and pepper, then grill for 2-3 minutes on each side, until greens are barely wilted and have good char marks on them.

Season scallops with salt and pepper then sear in a sauté pan for roughly 3 minutes on side. Cut tomato into 1/4 inch slices, add salt and pepper, then place on plate in the Jenga-style pattern that you see in the video. 

Top off with scallop and half of a smoked grape. Cut the bottom off the grilled romaine and place on plate. Top with cheese, strawberries and dressing on both scallop and greens. Enjoy!!
