From Simple to Super: 'Chicken' and waffles recipe

“Chicken” and Waffles (with a Seafood twist) 

Serves 3

Sweet Potato Waffle
1 1/2 cups of pureed sweet potato
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
6 egg whites (beat until there are firm peaks)
1 cup milk
1/4 cup brown sugar
1/4 cup butter

Mix all wet ingredients and dry ingredients separately, then combine the wet into the dry. Then fold in whipped egg whites last.
Place mixture in waffle maker.

Soy Ginger Syrup
10 tablespoons syrup
4 tablespoons soy sauce
3 teaspoons lemon juice
2 tablespoons minced ginger

Put everything in sauce pot on medium heat and reduce by 1/4 , let cool then serve.
For Salmon:
3 6 ounce pieces of salmon

Marinade for salmon
3 cups soy sauce
1 cup brown sugar
1/2 cup rum
Marinate overnight, then smoke in smoker or in smoker bag until desired doneness. If using oven, heat at 400 degrees for approximately 15 minutes.

Cut waffle into 4 pieces, stack, and place salmon on top. Drizzle with Soy Ginger syrup. Enjoy!!
