From Simple to Super: Fish and Chips

Fish and Chips (Chips with fish)

4 6oz cod fillets
2 cups crushed potato chips (any of your choice, I suggest half plain Lays and BBQ)
1 1/2 cups Panko bread crumbs
1/2 cup grated Parmesan
(Place Parmesan,Panko,and chips in food processor until fully combined)
2 eggs (mix with 4 tablespoons water)
1 cup flour (season with pepper)
Vegetable oil (enough to deep fry, set on 350)

To bread fish first place fish in flour, then dust off excess flour, then dip in egg wash, then in chip mix, then allow to chill in the freezer for 5-10 minutes. Heat up oil to 350. Deep fry fish for approximately 6-10 minutes.

Tequila lime glaze

1 cup water
1 cup sugar
1/2 cup tequila
6 limes (juiced)

Place water and sugar in sauce pan and turn on medium high. Allow the the simple syrup to cook down by half before you add the lime juice and the tequila. Allow to cool then serve. Drizzle glaze on top of fish. Garnish with lime and sweet potato chips. Enjoy!
