(LBF) -- The long-awaited second location of Con Huevos will open tomorrow.

Big, open, bright and airy, the new restaurant is a lot of things that the original — and very small — Con Huevos on Frankfort Avenue is not.

Con Huevos announced in January that it had leased space in the Holiday Manor shopping center to open a second location, but the project has been under construction since the fall.

Izmene Peredo, who owns the restaurant with her husband, Jesus Martinez, said they invested about $750,000 into the renovation and making the space into a Con Huevos.

The 3,000-square-foot restaurant will seat about 100 people and will have 30 employees.

Con Huevos' menu, by chef Paco García, will remain largely the same at both locations, but Peredo said she and Martinez will apply for a liquor license for the Holiday Manor location so it can serve brunch cocktails.

The aesthetic of the restaurant compliments Peredo and Martinez's Mexican heritage, with tile work lining the bar, a bright yellow booth bench running along one wall, speckled with colorful pillows they brought from Mexico.
